Calico Jack’s Tropical Vacation

When I was lying on the beach during our visit to Castaway Cay, Disney’s private island in the Bahamas, a darling lady carrying a drink tray approached me.

Through the sun glinting off the teal blue water, I lifted my head up a little, squinted my eyes, and peeked over my sunglassses to read her name tag.  It said “Poppy from England”.


Disney Cruise Line hires people from all over the world to make up the cast for their fleet.  It’s part of what I loved so much about our wonderful cruise, we met so many delightful people from all over the world.

Poppy handed me a pina colada and said in her perfect English accent, “Not a bad life is it ma’am?”.  I was thinking it was the best day of my entire existence, but I just said softly, “nope, not a bad life at all”.

Oh, how I miss that darling Poppy, that pina colada with it’s intoxicating coconut flavor, and that lovey beach with it’s white sand and water as warm as my bathtub.  How my heart longs to go back there and lie in the sun.  One day I will be there again.


Oh yeah, this post is about a cocktail…I almost forgot to tell you that…

I created this little drink to remind me of that glorious day in the tropics.  It makes me close my eyes and think of that beautiful Bahamian shore…

I named this drink after my favorite brand of Rum…Calico Jack’s.  For this drink you will need a bottle of this and a few other things:


If you want to make a little garnish for your cocktail, you will also need some long tooth picks, a maraschino cherry, and a wedge of fresh pineapple.  You just assemble the garnish like so:


Then you are going to measure out one shot each of the rum, 7-up, pineapple juice, and cranberry juice.  Grab an empty glass and a cocktail swizzle so you can mix it all up.


Pour everything into the empty glass, stir gently, and add your garnish.

Can I confess something to you?  After I completed my photo shoot for this post, I drank this cocktail.  It might have been before noon, but it just looked too good to pass up.  It did not disappoint.


I have to say that I think both Poppy and Calico Jack would approve of this little drink.

Enjoy it under a palm tree on a white beach somewhere or just sip it down sittin’ on your back porch swing.  It doesn’t matter because a couple of these will take you wherever you want to be!


Calico Jack’s Tropical Vacation

Prep Time: 5 minutes

Yield: 1 cocktail


  • 1 shot each of the following:
  • Calico Jack's Coconut Rum
  • Pineapple Juice
  • Cranberry Juice
  • 7-up
  • For the garnish:
  • a long party toothpick, a wedge of lime, fresh pineapple, and a maraschino cherry


  1. Mix the shots together in a glass and stir gently with a swizzle. Push a wedge of lime, pineapple, and a cherry onto a toothpick and set across the top of your glass. If your ingredients are not chilled, this can be served over ice. Close your eyes and set sail to your own tropical hideaway! Here's to you Jack!
