Denver Omelet Sliders

I like to take 2 hours to drink my coffee on weekends.

I do not like to flip omelets.

Oh, don’t get me wrong, I like to serve omelets.   I like even better to eat omelets.  But, I am not up to slaving over a hot stove on my weekend mornings.   If I do that, how is my newspaper going to get read and how am I going to get my relaxation in before another crazy week?

Well, this fantastic recipe lets me eat delicious omeletes in a very lazy way.  It’s the best of both worlds…a hearty nutritious breakfast with next to zero effort.  Yay!

I was inspired to create this recipe for a contest through Kretschmar Deli.  Grocery counter deli products have made up probably 75% of the lunches I’ve eaten at my desk for the past several years.  They pretty much know me by name at the deli counter at my local grocery store.  If I have a few pieces of ham and cheese, I’m content with life.   I don’t think I have a friend that doesn’t know that about me…I’m pretty much known for my love of meat and cheese.

Obviously for a contest I needed to be a little more creative than rolling my ham slices around cheddar.  I have been making everything in a sheet pan lately because using a sheet pan as the single cooking tool for your dinner is all the rage these days.  Somehow my mind just thought it should be a thing that you make your omelet in a sheet pan.  So here we are… sheet pan Denver Omelet Sliders!

I’m actually getting up in five hours to make these on KUTV News for you all!  You can learn how easy they are to make while you drink your coffee in the morning.  My coffee time is going to have to wait until I’m done.

Denver Omelete Sliders

Ingredients

  • 1 Tablespoon butter, softened
  • 10 large Eggs
  • 1/4 Cup half & half
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 1/2 Cups Kretschmar Deli mild cheddar cheese, grated
  • 6 ounces Kretschmar Deli Brown Sugar Ham, diced
  • 1/3 Cup diced red onion
  • 1/2 Cup diced green bell pepper
  • 1/2 Cup diced red bell pepper
  • 12 slider buns or soft dinner rolls, split
  • 12 slices Kretschmar Deli Mild Cheddar Cheese
  • 12 thin slices Kretschmar Deli Black Forest Ham

Instructions

  1. Preheat the oven to 375 degrees. And grease an 8 X 12 rimmed baking sheet with the butter.
  2. Crack the eggs into a large bowl. Add the half & half, salt, pepper, the grated cheddar, and the diced ham. Whisk to combine.
  3. Add the diced vegetables into the egg mixture and whisk to combine. Pour the egg mixture into the prepared pan. Bake for 20 minutes.
  4. Remove the omelet from the oven and let sit five minutes to cool slightly. Meanwhile, place the bottoms of the buns onto another 8X12 inch rimmed baking sheet and place 1/2 slice of cheese onto each bun.
  5. Cut the omelet into 12 squares. Place 1 square onto each bottom bun. Top each square with a slice of ham, then another 1/2 slice of cheese. Set the tops of the buns in place.
  6. Bake the sliders for an additional ten minutes, just until the cheese is melted and the sandwiches are warmed through, then serve hot.
