After a very busy weekend I woke up this Monday Morning to two sick kids, neither of them in any condition to go to school. After administering nebulizer treatments, doling out Tylenol, and making sure everybody was comfortable, I was finally on my way out the door five minutes after I was supposed to be at the office. Just when my foot touched the stoop I heard Mason, my teenager calling me. He was trying to email his book report to his English teacher and the document wouldn’t attach. I dropped everything and went upstairs to help him. I asked him to email the report to me first to make sure it was going through before we sent it to his teacher. I look down at my phone and I have an email from username “Swag Daddy”!?! I said, “son, are you Swag Daddy”? “Yep” he says, “that’s my school email address”. Well, that’s a battle I couldn’t pick at 8:30 AM on Monday morning so I emailed English teacher Mr. Flores, moved on and went to work.
After stopping for gas and speeding all the way to cut 15 minutes off my hour commute, I sat down at my desk already exhausted. I thought to myself that I could really use something to perk up my day. Just then I got an email from Farm Rich letting me know they’d selected my Mini Meatball Subs as one of the winners in their Snack Hack Contest. Yay! I won a $100 Walmart gift card and some free products. I LOVE FREE GROCERIES…the best prize ever!
So with that I decided there’d be no more complaining to myself about Monday.
I have to say that Farm Rich Meatballs are much higher quality than any other frozen meatball variety I’ve tried. They have a really nice texture and flavor. It’s sure nice to be able to have a bag of them on hand to pull out and use anytime. I often just heat them up with some tomato sauce for a quick low-carb lunch.
These adorable, tasty little snacks contain a whole five ingredients-you hafta love that
All you do is take a tube of sheet pastry (like Pillsbury) and cut it into 12 small squares with a pizza cutter. Shove those tiny squares into a mini muffin pan and par bake them for just a couple minutes. That way you’ll be sure the bottom gets all the way done.
In the meantime, place 12 Farm Rich Italian Style, Original, or Turkey Meatballs into a sauce pan. Add just enough pizza sauce to coat them. Heat them on medium low for about five to eight minutes, just until they are heated through. Spoon the meatballs into the center of the par baked pastries and top them with a little shredded cheese. Bake according to the directions on the sheet dough.
When they’re all done just sprinkle on a little fresh oregano and serve them up. I like to serve them with a little extra sauce ’cause I like saucy things.
This recipe can easily be doubled or quadrupled if you have a big crowd to feed. They make perfect crowd pleasers!
