Guacamole Egg Salad Sandwich

This is a mayo-free egg salad sandwich full of creamy avocado and all the flavors of your favorite guacamole!   It was the winner of the Dieting with Chef Meg recipe contest last month.   Make sure you cruise on over to Chef Meg’s site.  It’s a really fun blog with all kinds of healthy recipes.  Chef Meg is a dietitian and behavioral therapist so she knows her stuff too.


I was purty honored to be the winner of her contest.  She sent me the nicest basket of goodies as a prize…all kinds of kitchen stuff.  It was like Christmas when it came to my doorstep.

Some of ya might remember that I was going to be a dietitian back in the day.  I ended up getting a minor in nutrition, but everything has changed since then-not just with me but with nutrition.   I’m kind of glad I didn’t end up going into that field because I’m chubby now and what would I say to my clients?  Anyway, things have a way of working out I guess.  I still do try to eat healthfully and I am totally doing Zumba twice a week so there is hope for me yet.

I want you to know  I have a legit excuse for this post being so late.  My computer has been in the shop.  You guys know how much that stresses me right out.   The one plus is that after they fixed it, they cleaned it for me.  It feels so good to type on clean keys and look at a clean screen.  Food bloggers have really messy computers and camera equipment.  We work with greasy fingers and get crumbs everywhere.  I always have to apologize at the computer store for my gross computer.  You would think I’d clean it myself, but no.  Aint nobody got time for that!

So anyway, better late than never.  Chad and the boys loved this sandwich.  I didn’t tell them it was healthy or mayo-free.  I just served it up for lunch like their regular old egg salad that they’ve eaten a thousand times.  They ate it up and asked for more.  You know how picky and spoiled they are, so I think that really says something.

You’ll find a good lot of avocado egg salad recipes on Pinterest, but you won’t find any guacamole egg salad.  I was quite stunned nobody had come up with it yet because it really works!  I hope you try it and love it.  Please let me know if you do!

Here’s the recipe:

Guacamole Egg Salad Sandwich


  • 2 hard-boiled eggs, diced
  • 2 hard-boiled egg whites, diced
  • ¼ small red onion, diced
  • 1 jalapeno pepper, seeds removed, diced
  • ¼ cup cilantro, chopped
  • 2 roma tomatoes, seeded, diced
  • Juice of 1 lime
  • 1 medium ripe avocado, diced or sliced
  • Salt, pepper and Sriracha to taste
  • 5 Oroweat Sandwich Thin multigrain rolls or 10 slices of whole-grain bread or GF bread for gluten free folks


  1. Boil the eggs. While the eggs are boiling, prepare the rest of your ingredients. Once boiled, allow the eggs to cool, then peel, remove the yolks from two of the eggs and then dice the whole eggs and egg whites together.
  2. Mix all ingredients with a fork and mash the avocado as you are mixing. Season with salt, pepper and Sriracha (optional) to taste.
  3. Serve the guacamole egg salad on top of a sandwich thin or 2 pieces of whole grain bread. Makes 5 sandwiches. Store guacamole egg salad in the refrigerator for 3 days.

  2. I normally don’t eat egg salad because of the mayo – ew! Need to try this, but leave out the red onion 😛
