Just because it’s football fare, doesn’t mean it can’t be a little fancy, right? I bet you have more than a few football fanatics on your Super Bowl party guest list that will be appreciative of some upscale eats.

As you can see, these are absolutely gorgeous, but they happen to taste even better than they look. The creamy and spicy chicken filling is sandwiched between two Fillo napoleons and topped with some cool and tangy guacamole.
What I think when I look at these quesadillas is, “move over tortillas!” The crunchy layers of Fillo dough are the perfect compliment to this meaty, flavorful filling.
In case you think I’m talking about a historical figure when I say “napoleon”, let me take a minute to explain. A napoleon in terms of food, is simply a pastry made of many layers, and there is no pastry more fit for layering than Athens Fillo Dough. With virtually no effort at all, you get all of these stunning, perfectly golden sheets of pastry. The more layers you have, the more crispy and flaky the bite will be.
Let’s take a quick look at how these are done.
On a clean and dry surface set down one sheet of Fillo Dough. Spray it lightly with olive oil cooking spray. Stack seven more sheets right on top, one at a time, spraying each lightly with the cooking spray as you layer. With a very sharp knife, cut the dough into 16 rectangles.
Place the squares on sheet pan. Place another sheet pan on top of the squares to keep them flat while they cook. Place them in a 400 degree oven for about ten minutes or until golden and crisp.
Let the napoleons cool before you assemble the stacks. Then, just place a couple tablespoons of the filling onto one of the rectangles, top with another, and finish with a dollop of the guacamole.
