As you can see, these are absolutely gorgeous, but they happen to taste even better than they look.  The creamy and spicy chicken filling is sandwiched between two Fillo napoleons and topped with some cool and tangy guacamole.

What I think when I look at these quesadillas is, “move over tortillas!”  The crunchy layers of Fillo dough are the perfect compliment to this meaty, flavorful filling.

In case you think I’m talking about a historical figure when I say “napoleon”, let me take a minute to explain.  A napoleon in terms of food,  is simply a pastry made of many layers, and there is no pastry more fit for layering than Athens Fillo Dough.  With virtually no effort at all, you get all of these stunning, perfectly golden sheets of pastry.  The more layers you have, the more crispy and flaky the bite will be.

Let’s take a quick look at how these are done.

On a clean and dry surface set down one sheet of Fillo Dough.  Spray it lightly with olive oil cooking spray.  Stack seven more sheets right on top, one at a time, spraying each lightly with the cooking spray as you layer.  With a very sharp knife, cut the dough into 16 rectangles.

Place the squares on sheet pan.  Place another sheet pan on top of the squares to keep them flat while they cook.  Place them in a 400 degree oven for about ten minutes or until golden and crisp.

Let the napoleons cool before you assemble the stacks.  Then, just place a couple tablespoons of the filling onto one of the rectangles, top with another, and finish with a dollop of the guacamole.

I walk you right through how to make the filling and the guac in the printable below.  Both require just a few simple ingredients and only a couple of steps.

It’s worth noting that each recipe makes 40 stacks, so this is another appetizer that’s going to go a long way to feed a crowd of hungry football fans.

Quarterback Quesadilla Stacks

Yield: 40 stacks

Ingredients

  • 1 box Athens Fillo Dough
  • Olive oil cooking spray
  • For the filling:
  • 2 Tbs olive oil
  • 2 lbs fresh chicken breast tenders, diced small
  • 4 fresh limes
  • 1 envelope taco seasoning
  • 1 tsp salt
  • 4 large jalapenos, minced
  • 1 12 ounce tub whipped cream cheese
  • 2 cups cheddar-jack shredded cheese
  • For the guacamole:
  • 4 ripe avocados
  • The juice of two fresh limes
  • 1 tsp coriander
  • 1 tsp salt
  • 1 small bunch cilantro

Instructions

  1. For the napoleons preheat the oven to 400 degrees.
  2. For the filling, heat the olive oil in a large skillet over medium high heat. Add the chicken to the pan and squeeze the juice from four limes onto the chicken. Add the taco seasoning, salt, and jalapenos, while the chicken cooks through. Stir in the cheeses. Remove from heat.
  3. To make the guac, put all of the ingredients into a food processor or blender and puree.
  4. To assemble the stacks place about 2 Tablespoons of filling onto 20 of the napoleons. Top with another napoleon. Add a teaspoon of guac to the tops of each stack. Serve immediately.

  4. Okay, that’s it. I am making this one. I like every single thing in it.

    • I’m so glad, Rosann! Let me know what you think of them. If you have leftovers, just put the Fillo in a Tupperware container and the filling in a separate one. Then you can make them up as you want them. They make a great lunch.
