Sheet Pan Chicken Quesadillas

I’ve been having a lot of fun creating new family dinners with Healthy Solutions Spice Blends No Sugar/No Salt products for their 2017 recipe contest.  I ordered the whole collection of eight spices so I wouldn’t be limited on my creations.  It’s a steal at about $25 bucks for eight packets of seasoning, each with multiple servings.

I have to say, this sheet pan quesadilla is my best recipe yet.  My family loves quesadillas but I hate standing at the stove assembling and cooking them one at a time.  Everyone’s always done eating before I even get to sit down and then we miss out on each other’s company at the table.


I used the Authentic Chili Tacos Spice Blend for this beauty.

I employed another little trick to make this recipe fit our lifestyle…I used low carb tortillas, making this dish about ten carbs for a big slab of a serving (three of these little squares).  Yay for low carb dinners!

Healthy Spice Solutions makes a conscientious effort to keep the carbs low in their blends which I really appreciate because I can use them liberally for full flavor in all my recipes.


That teenager I have living upstairs that never wants to come out of his room gave this recipe a thumbs up.  I got voluntary compliment and a “this is really good, Mom”, from him so I felt like I really accomplished something with this one.

As I was serving this up, I got to thinking this would be a really great pot luck item to bring to any kind of a get together.  I’m always trying to think of something easy I can make that’s substantial and will go along way, but will please everyone.  I can’t imagine anyone not lining up for this deliciousness.  Plus, sheet pan dinners are kind of the cool thing to make right now.  That makes total sense considering they always turn out great and they are so easy.


You could add your Healthy Spice Blends Authentic Chili Tacos seasoning to pork or beef and use that to fill this yummy quesadilla as well.  There are no strict rules here…there’s just deliciousness for days.


My only regret today is that I really did eat more than my fare share of this dish.  I was gluttonous.  My only excuse is that it’s Sunday and I worked hard at my second job all weekend, and I was really hungry.   Admittedly, I would have had 3 squares of this even if that wasn’t the case but we don’t need to go there :)

This will be a regular in our dinner rotation.  I love when a cooking experiment turns into a family favorite.

Sheet Pan Chicken Quesadillas


  • 2 Cups cooked chicken, shredded
  • 2 Tablespoons, plus one teaspoon Healthy Spice Solutions Authentic Chili Tacos Blend
  • 4 ounces reduced fat cream cheese
  • 1 seven ounce can diced green chilies
  • 1/4 Cup chicken broth
  • Cooking spray
  • 4 burrito sized low carb whole wheat tortillas
  • 1 1/2 Cups Monterey Jack cheese, grated, divided
  • 1/2 Cup reduced fat cheddar cheese, grated
  • 1/4 Cup cilantro, chopped
  • Sour cream and salsa for serving


  1. Place the cooked chicken into a skillet with the spice blend, cream cheese, green chills, and chicken broth. Heat and stir just until combined.
  2. Heat oven to 400 degrees. Spray an 8 X 12 rimmed baking sheet with cooking spray. Place two of the tortillas onto the pan. They will cover all but the very corners of the sheet pan.
  3. Scoop the chicken mixture onto the tortillas and spread it out evenly, all the way to the edges of the pan. Top the chicken with one cup of the Monterey Jack Cheese.
  4. Place the remaining two tortillas on top and tuck the edges in.
  5. Top with the remaining Monterey Jack cheese and the cheddar. Sprinkle the remaining spice blend over the quesadilla, then bake for about 12 minutes, just until the cheese is melted and the quesadilla is heated through.
  6. Remove the quesadilla from the oven and top with fresh cilantro. Cut the quesadilla into 12 squares. Dollop with sour cream and salsa if desired and serve.
